Cauliflower Soup

Yield: 6 servings

Ingredients:

  • 1 Tbsp. olive oil
  • 2 medium onions, diced
  • 1 bay leaf
  • 1 1/4 tsp. ground cumin
  • 1 tsp. kosher salt
  • 1 tsp. ground turmeric
  • 1/2 tsp. ground coriander
  • 1/8 tsp. ground cardamom
  • black pepper
  • crushed red pepper flakes
  • 4 garlic cloves, minced
  • 4 1/2 cups vegetable broth
  • 1 large head of cauliflower, roughly chopped
  • 1 cup canned coconut milk
  • 1 Tbsp. apple cider vinegar

Directions:

  1. In a large pot, cook the onion and spices.
  2. Add garlic and continue to cook.
  3. Add broth and cauliflower and bring to a boil.
  4. Simmer for 15 minutes until cauliflower is tender.
  5. Blend until smooth.
  6. Add coconut milk and vinegar.
  7. Return to pot and warm soup but do not boil.
